I love the holidays. I love the twinkling lights, the parties, the excitement of my nieces and nephew every time they glimpse a new present under the tree...and I especially love the food! Each year, when the holidays roll around, my family starts baking like mad. Case in point: this Orange Cranberry Bread Recipe!

Pies, candies, cookies, cakes - the sky is the limit when it comes to the sweet treats we come up with! Unfortunately, the sky is the limit on the amount of weight we can gain as well! As you may recall from posts I've written over the last few years, I have made a concentrated effort on eating better and one of the biggest changes in my diet has been cutting out the excess sugar.

For the last two years, I've made plenty of sweets during the holidays, but I've actually eaten very little myself. Because you know, all of that sugar!

I hardly eat ANY sugar anymore! Not in my coffee, or tea, or on top of my oatmeal...it kind of stinks. I save it all up for when I bake, and even then, I feel guilty if I eat very much of it. I really miss my sweets.

When I was asked to come up with a recipe and to swap out the sugar for SPLENDA® No Calorie Sweetener, I had a bit of a light bulb moment! The result was this Orange Cranberry Bread Recipe, in which I swapped out the regular sugar and the brown sugar forSPLENDA® granulated sweetener and brown sugar blend.

Ingredients

  • 2 cups all-purpose flour
  • non-stick baking spray with flour
  • ¾ cup SPLENDA granulated
  • ¼ cup SPLENDA Brown Sugar Blend
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 stick cold butter cut into small pieces
  • ¾ cup fresh orange juice
  • 1 15 ounce can of Mandarin oranges drained thoroughly
  • 1 egg
  • 1 cup dried cranberries

Instructions

  • Preheat your oven to 350 degrees and spray a loaf pan with non-stick cooking spray with flour. You can use PAM or Baker's Joy.

  • Combine the flour, SPLENDAs, salt, baking soda and butter in a stand mixer or large bowl and beat until you have fine crumbs. This will take a while!

  • Add the orange juice and egg and beat on low speed until the mixture is just combined.

  • Add Mandarin oranges and cranberries and stir by hand.

  • Bake in the preheated oven for 1 hour and 5 minutes. Rotate the pan halfway through the cooking time to insure even cooking.

  • Let it cool for at least 30 minutes before cutting or it will fall apart!
